Peach and Jalapeno Summer Salad Paleo + Whole30

As if I haven't mentioned it enough, I love a good salad.  And I almost have as much fun coming up with new ways to make salad as I do eating them!  Summer is probably my favorite time of year for salads as well because it's hot and muggy (especially down here in the south) and you just don't feel like eating those hearty things you craved in the winter.  At least I don't.  Unless it's pizza.  I always want pizza.

The peaches this year have been phenomenal and Georgia is literally a few minutes away, so I've been taking advantage of the Georgia peaches whenever I can get them.  One of my favorite things to do to a sweet dish is add a punch of spice.  And when I say punch, I mean more like a throat punch.  I will eat a whole raw jalapeño, seeds included.  I think maybe it gives me an endorphin rush, but I love them.  But don't worry, you don't have to eat an entire jalapeño to make this salad, you can customize it however you like.

I like to keep a batch of grilled chicken breasts on hand in the fridge for easy meals like this, so I added chicken to mine and served it as a main course, but you could just as easily omit it and use it as a side. Sometimes I go crazy and add everything but the kitchen sink to my salads and then sometimes, as in the case with this one, I keep the ingredients simple and let one or two flavors be the star.

Also, if you want to make this salad Paleo and Whole30 approved, make sure to omit the goat cheese, otherwise, I like the added bit of tang and creaminess it provides to offset the spice.

WHAT YOU NEED:


MIXED GREENS

JALAPENO

FRESH PEACHES

BALSAMIC DRESSING (I USED TESSAMAE'S)

 CRUMBLED GOAT CHEESE

GRILLED CHICKEN BREAST (OPTIONAL)

PREPERATION:


LITERALLY PUT EVERYTHING IN A BOWL AND DRIZZLE WITH DRESSING AND EAT IT.  IT'S THAT EASY.  NO, I'M NOT KIDDING. 

OK, IT HELPS IF YOU MAKE IT LOOK PRETTY, BUT IF YOU'RE THE ONLY ONE EATING IT, WHO CARES?!
